Hopefully these sugar cookies should SWEETEN up your day ><

They are very easy to make but they take about 2 and a half hours because of refrigerating the dough. So while they’re cooling, you can relax, have a bath, have some wine, maybe go for a jog… The sky is the limit (for two or more hours).

They are really fluffy, soft and melt in your mouth. Perfect for a night in after work.

Here’s the receipe! ENJOY ❤

INGREDIENTS:

  • 1 cup butter
  • 1 cup granulated sugar
  • 1/4 cup unsweetened apple sauce
  • 1/2 teaspoon of vanilla
  • 3 cups flour
  • 1/4 teaspoon of salt

METHOD:

  1. Mix the butter and sugar until fluffy. Add the applesauce and vanilla and continue to mix until combined.
  2. Add flour and salt and mix until combined.
  3. Mold and divide the dough into two discs. Wrap each disc in plastic wrap and refrigerate for at least two hours. (I refrigerated mine overnight because I got too lazy—if you do this, give them five minutes to get a little soft outside of the fridge before you go right into rolling if you don’t want sore arms the next day)
  4. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  5. Sprinkle a flat surface with flour to roll the dough. Unwrap one of the discs and sprinkle flour.
  6. Roll the dough to about 1/4 of an inch thickness and cut out shapes using cookie cutters. Place them on a cookie sheet and bake for 15 minutes.

Homemade Soft Pretzel Bites

Hello and happy Tuesday!! 2/5ths done the work week but who’s counting right? (HAHA..~not me~)

Well I’m glad to be home. Today was a regular work day filled with its ups and downs so getting home to my shows is really, really exciting!

I know I’m not alone when I say I love to munch or sip on something while watching TV but I’m tired of the regular- chips, popcorn, leftovers, the list goes on. So I decided to shake things up a little bit with these pretzel bites.

These are perfect for any occasion- potlucks, movie parties, brithdays, or even a night in like today. And who doesn’t like soft pretzels???? I mean come on! They come from heaven (or someone who is really good in the kitchen- so really, the same thing).

Anyways, here’s the recipe! Hope you enjoy 😀

INGREDIENTS: 

  • 1 1/2 cups warm water
  • 2 tablespoons golden yellow sugar
  • 1 1/8 teaspoons baking soda mixed with 1 1/8 teaspoons lemon juice
  • 1/2 cup melted unsalted butter
  • 2 1/2 teaspoons salt
  • 4 3/4 cups all-purpose flour
  • Vegetable oil
  • 12 cups water
  • 1/2 cup baking soda
  • 1 whole egg, beaten with 1 tablespoon cold water
  • Coarse sea salt

METHOD:

  1. Mix the water, sugar, baking soda-lemon mixture, and butter in the medium sized bowl until combined. Let sit for 5 minutes.
  2. Add the salt and flour to the water mixture and mix with dough hook on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 30 seconds. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
  3. Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
  4. Preheat the oven to 425 degrees F.
  5. Bring the 12 cups of water to a boil in a small pan over high heat and carefully add the baking soda very slowly as it will boil over.
  6. Line a baking sheet with foil or oil spray.
  7. Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 pieces. Roll each piece into a long rope. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches for about 30 seconds/ batch. Remove with a large slotted spoon. Place pretzel bites on a baking sheet. Make sure they are not touching. Brush the tops with the egg wash and season with the salt. Place into the oven and bake for 19 minutes until golden brown.
  8. Remove to a baking rack and let rest 5 minutes before eating.

*You can dip these in cheese sauce, honey, or toss them in sugar and cinnamon as I did.

Lemon Garlic Salmon

Healthy and loaded with flavor! Just what this lazy Sunday needs.

Sunday dinners are always boring. I usually throw a frozen pizza in the oven or something simple like that. But I’m shaking things up today!

Baked salmon is probably one of my favorite things to eat with a little bit of rice, a nice garden salad and some wine.

This recipe is really easy to make and fast, you can pair salmon with just about anything (rice, potatoes, salad, you name it)!

Pictured below is the raw salmon and below that is the  rosemary, lemon and garlic marinade. Pure heaven!

Recipe:

Ingredients:

  • 1/4 cup olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons lemon zest
  • 1-1/2 teaspoons finely chopped fresh rosemary
  • 1/4 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 4 salmon fillets, skin removed
  • Lemon wedges, for serving

Instructions:

  1. In a bowl, mix the olive oil, salt, pepper, lemon zest, rosemary, thyme and garlic. Add the salmon in and coat with the marinade. Refrigerate for at least 30 minutes.
  2. Preheat oven to 400F (205C)
  3. Place salmon on a tin foil lined baking sheet and drizzle the rest of the marinade over it. Bake for 10 minutes.
  4. Garnish with lemon wedges and serve

Creme Brulee

Hey hey! So I have accepted the fact that who I am now is a person who posts like barely once a month. You should accept it too. :p

But ANYWAYS, I made creme brulee and I am in love with myself. I took the day off from work and now I’m treating yourself. Mental break days are the best.

Creme Brulee is probably one of the easiest desserts to make, it’s pretty impressive and it’s always “just enough”. I also don’t know anyone who doesn’t like creme brulee.

I don’t have ramekins but I have these little mason jars I got from a desert store that also had creme brulee in them once upon a time so I’m using them.

So with that, here’s the recipe:

Serves: 2

Ingredients:

  • 3 Egg Yolks
  • 1/3 cup softened butter
  • 1 1/4 cup milk
  • 1 1/2 tablespoon Sugar
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Sugar (one tablespoon for each serving)

Directions:

  1. Whisk all the ingredients (except the 2 tbs sugar) together in a medium sized bowl
  2. Sieve the mixture into two ramekins, baby mason jars or mugs
  3. Cover each ramekin with foil and place in a pot of boiling water with a lid and steam for 15 minutesimg_3844
  4. Chill in the fridge for about 2 hours
  5. Gently drain the creme brulees and dab the tops with paper towel so it’s not very wet
  6. Sprinkle a table spoon of sugar on each creme brulee and use a torch to burn till it turns a deep amber. (if you don’t have a torch, use a spoon heated over a stove and press onto the sugar).image1
  7. Refrigerate for about 30 minutes (when the crust hardens).
  8. Serve cold and enjoy.

Coconut Milk Thyme Chicken

Hello everyone! Hope y’all have been doing well. I haven’t posted in a while and I have no real excuse sooooo. YEH!

Anyways, today I made coconut milk thyme chicken and rice for dinner. Everyone knows how to make rice so I didn’t include that in this recipe. This chicken however is just as easy to make and fast too. I cooked from frozen chicken and everything (including the rice) was ready in about 40 minutes.

Ingredients

  • 4 chicken drumsticks
  • salt and fresh ground pepper, to taste
  • 1/2 tablespoons olive oil
  • 1/4 tablespoon butter
  • ¾ teaspoons of dried thyme
  • 3 garlic cloves; minced or diced
  • 1/2 cups coconut milk

Instructions

  1. Preheat oven to 375F degrees.
  2. Season chicken with salt and pepper.
  3. Heat olive oil and butter in a pan. When the butter is melted, add in the chicken till chicken is brown on the outside
  4. Add thyme and garlic; cook and stir for 30 seconds.
  5. Transfer chicken into a casserole dish and pour in the coconut milk. Bake until chicken is cooked (about 30 minutes)

Chicken Teriyaki Pineapple Bowls

Y’all!!! Let me tell you how easy this is to make and how fancy it looks.

First off, just look at it and appreciate it!!!!!! Second, omg…it was actually really good. Teriyaki is one of the easiest things to make and tastes like probably how heaven looks. So the only lengthy thing about this was making boiled rice but that’s because rice takes a while to boil and that’s just what that is. But overall, this was really easy. I threw in some pineapple into the sauce as well just to give it a sweeter taste and that really brought the flavors together. We had so much extra pineapple so we decided to make pineapple sorbet smoothies with the sorbet ice cream my friend had in his freezer and ice. It was an adventure (literally, because we used his food processor and all the liquids were splashing everywhere- just a mess).

Anyways, I suggest you all should try this. For the sauce I used brown sugar, sesame seeds, soy sauce, honey and brown sugar. Threw them all in after the chicken breasts were fully cooked, let simmer a bit; added a little water and VOILA! We felt fancy. :p
